Pressure Cooker Cheesy Chicken & Rice Casserole !!!! DEVIDED BY THREE TO FIT IN THE 4 QUART POT !!! 1 can Campbell'sŪ Condensed Cream of Chicken Soup 1 can Campbell'sŪ Broccoli and Cheese Soup 2 2/3 cups water 1 teaspoon onion powder 2 1/2 pounds skinless, boneless chicken breast halves 1 1/2 cup uncooked long grain white rice Optional - frozen mixed vegetables (carrots, green beans, corn, peas) 1 cup shredded Cheddar cheese NOTE: This recipe needs herbs or seasoning, it's a bit plain... Step 1 Stir the soup, water and onion powder in a medium bowl. Season the chicken as desired. Layer the chicken, rice and vegetables in a 6-quart stovetop pressure cooker. Pour the soup mixture over all. Step 2 Close and lock the lid. Bring to full pressure over high heat, the reduce the heat to medium-low. Cook for 18 minutes. Step 3 Do not open the cooker until the pressure has dropped. Season to taste. Sprinkle with the cheese.
